A Hotel Built for Fulton Market, Not Just Placed In It

Fulton Market was a working meatpacking district within living memory, and most of the hotels that have arrived since Google and the restaurant scene took over treat that history as a marketing footnote. The Hyatt House Chicago/West Loop does the opposite: architect Eckenhoff Saunders designed the 2019 tower around exposed brick, rebar detailing and reclaimed wood, and the result reads less like a chain hotel than like one more renovated warehouse on a block full of them. It is the rare extended-stay property that actually looks like where it is.

Why It Works

The building's two-part massing — a street-level podium topped by a tower that steps back above a glass-and-metal third-floor sky lobby — gives the hotel an actual architectural idea, not just a lobby refresh. H Bar and a custom-millwork coffee counter anchor that sky lobby, and the industrial material palette continues through the guest floors rather than stopping at the elevator: a radius chandelier and a slatted felt ceiling do the work other hotels leave to a single piece of lobby art. For a neighborhood built on honest materials and open kitchens, a hotel that commits to the same vocabulary earns its spot over the glass-tower alternatives nearby.

Why This Location

This is Fulton Market, steps from Randolph Street's Restaurant Row: Garcia's is a three-minute walk, Duck Duck Goat under half a mile, and dozens more of the city's most talked-about kitchens sit within easy walking distance. The United Center is a short drive for a game or a concert, and downtown and the lakefront are within about two miles. It is a neighborhood meant to be walked after dark, between dinner reservations, which is exactly how most guests here actually use it — this is a hotel chosen for its evenings, not its lobby.

The Sky Deck and the Kitchens

Two features set this property apart from the standard West Loop business hotel. The 14th-floor Sky Deck pairs an indoor pool with an open-air terrace built for the skyline rather than the pool itself — fire features, lounge seating, and a view back over the low-rise warehouses that define Fulton Market. And as the first Hyatt House inside Chicago's city limits, the hotel leans into the brand's extended-stay format with real efficiency kitchens in 67 of its 200 rooms, aimed squarely at the consultants and project teams who now fill this neighborhood on weeknights. For a traveler staying four nights or more, that kitchen is worth more than almost any other amenity on this list.

A Neighborhood Still Mid-Transformation

Fulton Market's reinvention is recent enough that the seams still show, and that is part of what makes staying here interesting rather than simply convenient. Loading docks and wholesale produce operations still run on some of the surrounding blocks, a few steps from restaurants with month-long reservation waits, and the hotel sits squarely inside that overlap. It is a more honest version of West Loop than the fully polished version sold on postcards, and for travelers who want to see a neighborhood mid-change rather than after it, that friction is the appeal.

Before You Book

This is a newer-build hotel in a neighborhood still mid-transformation, so the industrial edge outside the lobby is real, not staged. Valet runs extra and self-parking is scarce in Fulton Market generally, so budgeting for it matters, and evenings here lean toward restaurant crowds rather than quiet. What the location buys in return is arguably the best restaurant access of any hotel in this guide, and a design that does not pretend the neighborhood's industrial past never happened.
